Whole Berry Cranberry Sauce

Ingredients:

25.0 % Ocean Spray® Cranberry Puree, 6.2º Brix
22.0 % Ocean Spray Superior Whole Frozen Cranberries
49.4 % High fructose corn syrup, 42 fructose, 71º Brix*
3.6 % Water

* Staley Isosweet 100

Directions:

1. Heat sweetener to a boil in a saucepan or kettle over high heat.

2. Add cranberry puree and return to 95º C/205º F.

3. Add whole cranberries and continue to cook until berry skins begin to split, about 4-7 minutes.

4. Remove from heat, pack off, and cool immediately.

5. Allow 24 hours minimum for gel to form.

Note: To maintain best color, flavor and get strength, avoid prolonged cooking and holding. If better piece identity is preferred, cook time can be reduced, but cranberries may not be evenly dispersed throughout gel.
