Traditional Jellied Cranberry Sauce

Ingredients:

50.0 % Ocean Spray® Cranberry Puree, 6.2º Brix
50.0 High fructose corn syrup, 42% fructose, 71 Brix*

* Staley Isosweet 100

Directions:

1. Heat sweetener to a boil in a saucepan or kettle over high heat.

2. Add cranberry puree, return to 95ºC/205ºF, and hold for five minutes.

3. Remove from heat, pack off and cool immediately.

4. Allow 24 hours for gel to form.

Note: To maintain best color, flavor, and gel strength, avoid prolonged cooking and holding.
