Ingredients:
1 cup (175g) Ocean Spray® Sweetened Dried Cranberries 2 cups (500ml) extra light olive oil 1/2 cup (125ml) white wine vinegar 1/2 teaspoon salt 24 cups (1,814g) mixed salad greens 12 firm, ripe Bosc pears peeled and sliced into twelfths * 3 cups (345g) crumbled gorgonzola cheese 3 cups (324g) coarsely chopped toasted walnuts
Directions:
1. Combine sweetened dried cranberries, oil, vinegar and salt in a large food processor. Process until sweetened dried cranberries are finely chopped. Adjust seasonings; set aside.
2. Prepare each salad plate by lining with 1 cup greens and topping with 6 pear slices, 1 tablespoon cheese and 1 tablespoon walnuts.
3. Stir dressing well. Spoon over salad just before serving.
YIELDS: 24 servings; 3 cups vinaigrette
* Note: Sliced pears can be soaked in lemon water to prevent browning, if desired.
