Curried Cranberry Chicken Salad

Ingredients:

3 1/2 cups (770g) mayonnaise
1/2 cup (125ml) lime juice
4 teaspoon curry powder
10 cups (1,000g) chicken cubed and cooked
5 apples cut into 1/2-inch pieces
3 1/2 cups (613g) Ocean Spray® Sweetened Dried Cranberries
2 1/2 cups 5 sticks celery thinly sliced
1 cup (108g) chopped pecans
2/3 cup green onions thinly sliced

Directions:

1. Combine mayonnaise, lime juice and curry powder in a large mixing bowl.

2. Stir in remaining ingredients. Cover and chill.

3. Best prepared and served within 8 hours. To make a day ahead, add sweetened dried cranberries, pecans and green onions to salad mixture up to 8 hours before serving.

YIELDS: 20 cups or 8 ½ lbs.
