Ingredients:
8 ounces (250ml) vinaigrette-style dressing 4 tablespoons Ocean Spray® Cranberry Juice Cocktail 4 tablespoons maple syrup 4 cups (400g) smoked turkey, diced 4 cups (540g) hearts of palm, diced 4 cups (8 whole) avocado, diced 2 cups (350g) Ocean Spray® Sweetened Dried Cranberries 2 cups (216g) toasted walnuts, coarsely chopped 16 cups mesclun lettuce leaves 48 bibb lettuce leaves
Directions:
1. To make the dressing for the salad, combine vinaigrette, cranberry juice cocktail and maple syrup. Refrigerate until needed.
2. To assemble salad, combine turkey, hearts of palm, avocado, sweetened dried cranberries, walnuts, and toss with vinaigrette. Fold in mesclun lettuce.
3. To plate each salad, place 6 bibb lettuce leaves on plate and top with 2 cups of salad.
