Ingredients:
7 1/2 cups (1,875ml) chicken broth 2 cups brown rice 2 cups (330g) wild rice 1/2 cup butter 7 medium onions thinly sliced 2 tablespoons brown sugar 2 1/2 cups (438g) Ocean Spray® Sweetened Dried Cranberries 2 tablespoons orange zest
Directions:
1. Combine chicken broth and both rices in a large stockpot. Bring to a boil over medium-high heat. Reduce heat to low. Cover and simmer 45 minutes or until liquid is absorbed.
2. Heat butter in a large skillet over medium-high heat. Add onions; cook 10 to 15 minutes or until liquid is absorbed and onions are soft and translucent. Reduce heat to low. Stir in brown sugar. Cook 20 minutes longer, stirring often.
3. Add sweetened dried cranberries, cook 15 minutes longer or until onions are caramel colored.
4. Remove from heat. Stir in orange zest. Gently stir cranberry mixture into cooked rice.
