Reduced Fat Cranberry Honey Wheat Muffins

Ingredients:

2 pounds 11 ounces (1,219g) flour
1 pound (454g) whole wheat flour
7 ounces (198g) brown sugar
1 ounce (28g) baking powder
1 ounce (28g) salt
1 pound (454 g) honey
10 ounces (313ml) low-fat milk
7 ounces (219ml) applesauce
4 ounces (125ml) oil
4 eggs
1 ounce (31ml) vanilla
1 pound 4 ounces (567g) Ocean Spray® Frozen Sliced Cranberries

Directions:

1. Thoroughly combine flour, whole wheat flour, brown sugar, baking powder and salt.

2. Add honey, milk, applesauce, oil, eggs and vanilla to dry ingredients, mixing just until dry ingredients are moist.

3. Add cranberries to batter. Mix on low speed until thoroughly combined.

4. Using a #16 scoop, portion batter into 36 greased or paper-lined 2 3/4-inch (7cm) muffin tins.

5. Bake at 375ºF for about 25 minutes or until muffins test done.

YIELDS: 3 dozen muffins
