Reduced Fat Cranberry Chip Muffins

Ingredients:

2 pounds 10 ounces (1,191g) flour
15 ounces (425g) sugar
1 1/2 ounces (43g) baking powder
1 ounce (28g) salt
2 pounds 1 ounce (1,031ml) low-fat milk
10 ounces (313ml) applesauce
4 ounces (125ml) oil
4 eggs
2 ounces (57g) vanilla
1 pound 3 ounces (53g) Ocean Spray® Sweetened Dried Cranberries
9 ounces (225g) chocolate chips
Sugar

Directions:

1. Thoroughly combine flour, sugar, baking powder and salt.

2. Add milk, applesauce, oil, eggs and vanilla to dry ingredients, mixing just until dry ingredients are moist.

3. Add sweetened dried cranberries and chocolate chips to batter. Mix on low speed until thoroughly combined.

4. Using a #16 scoop, portion batter into 36 greased or paper-lined 2 3/4-inch muffin tins. Sprinkle with sugar.

5. Bake at 375ºF for about 25 minutes or until muffins test done.

YIELDS: 4 dozen muffins
