Raspberry White Chocolate Scones

Ingredients:

5 pounds 4 ounces (2,381g) flour
4 ounces (113g) sugar
2 ounces (57g) baking powder
1 pound (454g) butter or margarine, softened
2 pounds 2 ounces (1,062ml) heavy cream
6 ounces (187ml) vanilla extract
8 eggs
2 pounds 8 ounces (1,134g) Ocean Spray® Raspberry BerryFusions™ Fruits
1 pound 8 ounces (680g) white chocolate chips or pieces
Sugar

Directions:

1. Thoroughly combine dry ingredients.

2. Using the whisk attachment, finely work butter into dry ingredients, stopping to scrape butter from whisk.

3. Using the paddle attachment, add cream, vanilla extract, eggs, flavored fruit pieces and white chocolate, mixing just until the dry ingredients are moist.

4. Using a # 40 scoop, deposit onto a lightly greased sheet pan. Sprinkle with sugar.

5. Bake at 425ºF for 10 minutes or until golden brown.
