Ingredients:
10 cups (1,150g) flour 1 tablespoon + 1 tsp baking powder 1 tablespoon salt 2 1/2 teaspoons baking soda 1 1/4 cups (281g) butter or margarine 3 3/4 cups (863g) sugar 5 cups (1,250ml) lowfat yogurt 10 eggs 1 cup (250ml) lemon juice 1/4 cup (60ml) milk 6 cups (1,050g) Ocean Spray® Raspberry BerryFusions™ Fruits GLAZE: 1 1/2 cups (300g) powdered sugar 1/4 cup (60ml) water 2 teaspoons lemon zest
Directions:
1. Combine flour, baking powder, salt and baking soda in a large mixing bowl; set aside.
2. Beat butter or margarine and sugar in a large mixing bowl, until light and fluffy.
3. Add yogurt, eggs, lemon juice and milk; mix well.
4. Add dry ingredients, mixing just until dry ingredients are moist.
5. Add flavored fruit pieces; mix well.
6. Spread batter evenly in a lightly greased full sheet pan. Bake at 350ºF for 20 minutes or until bread tests done.
7. Combine glaze ingredients in a small bowl. Drizzle over bread.
YIELDS: 1 full sheet pan
