Homestyle Cranberry Honey Wheat Muffins

Ingredients:

2 (1,219g) pounds 11 ounces flour
1 pound (454g) whole wheat flour
7 ounces (198g) brown sugar
2 ounces (57g) baking powder
1 ounce (28g) salt
1 pound 8 ounces (680g) honey
14 ounces (438ml) oil
1 pound 8 ounces (750ml) milk
5 eggs
1 ounce (30ml) vanilla extract
1 pound 4 ounces (567g) Ocean Spray® Homestyle Chopped Cranberries

Directions:

1. Thoroughly combine flour, whole wheat flour, brown sugar, baking powder and salt.

2. Add honey, oil, milk, eggs and vanilla to dry ingredients, mixing just until dry ingredients are moist.

3. Add cranberries to batter. Mix on low speed until thoroughly combined.

4. Using a #16 scoop, portion batter into 36 greased or paper-lined muffin tins.

5. Bake at 375ºF in a standard oven for approximately 25 minutes or until muffins test done.

YIELDS: 3 dozen muffins
