Ingredients:
3 pound 4 ounces (1,474g) flour 1 pound 5 ounces (595g) sugar 2 ounces (57g) baking powder 1 ounce (28g) salt 5 eggs 2 pound 10 ounces (1,313ml) milk 1 pound 4 ounces (625ml) oil 1 pound 10 ounces (737g) Ocean Spray® Homestyle Chopped Cranberries 1 pound 8 ounces (680g) wild blueberries Sugar
Directions:
1. Thoroughly combine flour, sugar, baking powder and salt.
2. Add eggs, milk, and oil to dry ingredients, mixing just until dry ingredients are moist.
3. Add cranberries and blueberries to batter. Mix until thoroughly combined, about 2 minutes on low speed.
4. Using a #16 scoop, portion batter into 48 greased or paper-lined 2 3/4-inch (7cm) muffin tins. Sprinkle with sugar.
5. Bake at 350ºF in a standard for approximately 25 minutes or until muffins test done.
