Ingredients:
2 pounds 10 ounces (1,191g) flour 14 ounces (397g) brown sugar 1 ounce (28g) salt 1 ounce (28g) cinnamon 1 ounce (28g) nutmeg 1 ounce (28g) baking soda 2 pounds 2 ounces (964g) pumpkin 1 (624g) pound 6 ounces Ocean Spray® Frozen Sliced Cranberries OR Ocean Spray® Sweetened Dried Cranb 14 ounces (438g) oil 10 ounces (313ml) molasses 4 large whole eggs 7 ounces (219ml) milk
Directions:
1. Thoroughly combine flour, brown sugar, salt, cinnamon, nutmeg and baking soda in a large bowl.
2. Thoroughly combine pumpkin, cranberries, oil, molasses, eggs and milk in a separate bowl.
3. Add pumpkin mixture to dry ingredients, mixing just until dry ingredients are moist.
4. Using a #16 scoop, portion batter into 36 greased or paper-lined 2 3/4-inch (7cm) muffin tins.
5. Bake at 350ºF for approximately 25 minutes or until muffins test done.
