Cranberry Orange Scones

Ingredients:

5 pounds 4 ounces (2,381g) flour
4 ounces (113g) sugar
2 ounces (57g) baking powder
2 ounces (57g) salt
1 pound (454g) butter or margarine
2 pounds 2 ounces (1,063ml) heavy cream
8 eggs
2 pounds 8 ounces (1,134g) Ocean Spray® Sweetened Dried Cranberries
5 tablespoons orange zest
Sugar, for topping

Directions:

1. Combine dry ingredients using a mixer on low speed.

2. Finely work butter into the dry ingredients, using the whisk attachment.

3. Add cream, eggs, sweetened dried cranberries and orange zest, mixing with the paddle attachment just until dry ingredients are moist.

4. Roll out dough on a floured surface to 3/4-inch (2cm) thick. Cut scones using a 3-inch (7.5cm) round cutter. Place on ungreased sheet pans. Re-roll and cut scrap dough. Sprinkle tops with additional sugar.

5. Bake at 425ºF in a standard oven for 12 minutes or until golden brown.

YIELDS: 4 dozen scones
