Ingredients:
3 pounds 1 ounce (1,389 g) flour 1 1/4 cups (288 g) sugar 3 tablespoons + 1 tsp. baking powder 2 1/2 tablespoons ginger 2 1/2 tablespoons cinnamon 5 teaspoons baking soda 2 1/2 teaspoons salt 1 1/4 teaspoons nutmeg 1 1/4 teaspoons cloves 2 1/2 cups (875 g) molasses 2 1/2 cups (625 ml) milk 1 1/4 cups (313 ml) oil 2 eggs 5 teaspoons vanilla extract 8 cups (1,400 g) Ocean Spray® Fresh or Frozen Cranberries
Directions:
1. Combine flour, sugar, baking powder, ginger, cinnamon, baking soda, salt, nutmeg and cloves, using an electric mixer on low speed.
2. Combine molasses, milk, oil, eggs and vanilla in a separate bowl. Add to dry ingredients, mixing just until moistened.
3. Add cranberries.
4. Evenly spread batter into a greased full sheet pan.
5. Bake at 325º in a standard oven for 30 minutes or until a toothpick inserted into the center of the bread comes out clean.
6. Cool 15 minutes on wire rack. Cut into 20 x 15, 1 1/2 x 1 1/2-inch rows.
