Cranberry Bread Pudding

Ingredients:

15 cups (1,020g) toasted whole wheat bread cubes packed
5 1/2 cups (1,375ml) Ocean Spray® Cran•Raspberry® Raspberry Cranberry Juice Drink
2/3 cup (233g) honey
1 1/2 cups (338g) butter
3 teaspoons cinnamon
1 1/2 teaspoons nutmeg
2 1/2 cups (438g) Ocean Spray® Sweetened Dried Cranberries
Vanilla ice cream or whipped cream, garnish

Directions:

1. Put bread cubes in a lightly greased full hotel pan; set aside.

2. Combine remaining ingredients, except ice cream or whipped cream, in a large saucepan. Heat over medium-high heat just until butter is melted.

3. Pour cranberry mixture over bread cubes. Let stand 15 minutes, occasionally pressing lightly with a metal spatula until all of the bread is moistened.

4. Bake at 350° in a standard oven 45 minutes. Serve warm with ice cream or whipped cream.
