Cranberry Bran Muffins

Ingredients:

15 cups (720g) bran cereal
12 1/2 cups (3,125ml) buttermilk
3 3/4 cups (1,138g) molasses
2 1/2 cups (625ml) oil
1 1/4 cups (438g) honey
10 large eggs
15 cups (1,725g) flour
3 tablespoons + 1 teaspoon baking soda
2 1/2 teaspoons salt
7 1/2 cups (1,313g) Ocean Spray® Sweetened Dried Cranberries OR BerryFusions™ Fruits

Directions:

1. Combine bran, buttermilk, molasses, oil, honey and eggs just until moist, using an electric mixer with a paddle attachment. Let stand 10 minutes or until bran has softened.

2. Combine flour, baking soda and salt in a separate mixing bowl.

3. Add dry ingredients to bran mixture. Mix just until dry ingredients are moistened.

4. Add sweetened dried cranberries or flavored fruit pieces, mixing just until combined.

5. Using a #16 scoop, portion batter into greased or paper-lined 2 3/4-inch (7cm) muffin tins.

6. Bake in a standard oven at 400ºF for approximately 20 minutes or until muffins test done.

YIELDS: 10 dozen muffins
