Cranberry Bagels made with Sweetened Dried Cranberries

Ingredients:

52.2 % flour, all purpose
2.5 % sugar
0.6 % salt
1.2 % yeast, active dry
29.2 % water
5.0 % eggs
9.3 % Ocean Spray® Sweetened Dried Cranberries

Directions:

1. Combine half the four with the sugar, salt and yeast. Add the water and mix well to dissolve the sugar and salt. Add the eggs and 1/3 of the sweetened dried cranberries. Gradually add the balance of the flour and sweetened dried cranberries and mix to develop to a smooth, soft dough.

2. Let rise 30 minutes and punch down.

3. Divide into 60 pieces. Roll each piece into a rope approximately 7 inches long. Bring ends together and seal, forming a ring. Place on a cookie sheet, cover and let relax 15-30 minutes.

4. Drop bagels a few at a time into two inches of boiling water in a shallow pan. Boil approximately 1 to 1 ½ minutes on each side. Remove to a wire rack to cool slightly.

5. Place on a greased cookie sheet, brush with an egg wash, and bake in a standard oven at 400º F until golden brown (approximately 25 minutes).

YIELDS: 5 dozen bagels
