Cranberry Apple Bread

Ingredients:

2 pounds 10 ounces (1,191g) fresh apples, peeled and diced
1 pound 14 ounces (850g) sugar
4 ounces (125ml) oil
5 eggs
2 pounds 8 ounces (1,134g) flour
1 ounce (28g) baking powder
1/2 ounce (14g) baking soda
1/2 ounce (14g) cinnamon
1 pound 2 ounces (510g) Ocean Spray® Frozen Whole Cranberries
12 ounces (340g) chopped walnuts

Directions:

1. Preheat oven to 350ºF.

2. Combine apples, sugar and oil in a large mixing bowl. Mix on low speed until thoroughly combined.

3. Add eggs and mix well.

4. Combine dry ingredients. Add to apple mixture, mixing just until dry ingredients are moist, about 2 minutes.

5. Add cranberries and walnuts, mixing just until combined. Scrape down bowl.

6. Scale 1 pound 13 ounces (822g) of batter into 5 greased 8 1/2 x 4 1/2 x 2-inch (21.5 x 11.5 x 5cm) loaf pans. Bake for 1 hour or until bread tests done.

YIELDS: 5 loaves
