Cranberry Almond Cinnamon Rolls

Ingredients:

DOUGH:
1 5-pound (2,268g) box hot roll mix
2 1/2 teaspoons cardamom

FILLING:
1 1/4 cups (281g) margarine
1 1/2 cups (300 g) sugar
5 teaspoons cinnamon
6 1/3 cups (1,103g) Ocean Spray® Sweetened Dried Cranberries or BerryFusions™ Fruits
2 1/2 cups (150g) sliced almonds

GLAZE:
2 1/2 cups (500g) powdered sugar
5 tablespoons milk
2 1/2 teaspoons almond extract

Directions:

1. Prepare dough according to package directions, adding cardamom to dry ingredients.

2. Turn dough out onto a lightly floured surface; divide into 4 equal pieces. Roll each piece into a 20x25-inch (50 x 62.5cm) rectangle.

3. Spread 5 tablespoons of the margarine evenly over each piece of dough.

4. Combine sugar and cinnamon in a small mixing bowl; sprinkle 6 tablespoons over each piece of dough.

5. Sprinkle about 1 1/2 cups (261g) sweetened dried cranberries and about 1/3 cup (20g) almonds over each piece of dough.

6. Starting at the 25-inch side, tightly roll each piece of dough jelly-roll style. Press edges to seal.

7. Cut each roll into 20 slices with a serrated knife. Place cut-side down in 2 full hotel pans.

8. Bake in a standard oven at 375ºF for 25 minutes or until golden brown. Cool in pans 10 minutes.

9. To make glaze, combine all glaze ingredients in a small mixing bowl. Drizzle over cooled rolls.
