Ingredients:
1 pound 10 ounces (737g) shortening 1 pound 12 ounces (794g) sugar 8 eggs 1 ounce (31ml) vanilla 3 pounds (1,361g) flour 1 ounce (28g) baking powder 1 ounce (28g) salt 1 pound 6 ounces (624g) Ocean Spray® Homestyle Chopped Frozen Cranberries 2 pounds 8 ounces (1,134g) semi-sweet chocolate, melted 2 pounds (907g) chopped nuts
Directions:
1. Thoroughly combine shortening and sugar.
2. Add eggs and vanilla, mixing thoroughly.
3. Thoroughly combine flour, baking powder and salt. Add to shortening mixture, mixing until a soft dough forms.
4. Add cranberries, mixing thoroughly.
5. IMMEDIATELY scoop dough, using a #40 scoop and deposit onto a paper-lined pan. Bake at 350ºF for 20-22 minutes. Let cool for 15 minutes on a wire rack.
5. Dip half of each cookie into melted chocolate and then in nuts. Allow chocolate to dry completely.
