Ingredients:
TOPPING: 4 ounces (113g) sugar 2 ounces (57g) sliced almonds BATTER: 1 pound 2 ounces (510g) sugar 1 pound 2 ounces (510g) butter or margarine, softened 2 ounces (63ml) water 1 ounce (28g) baking powder 1 ounce (31ml) almond extract 3/4 teaspoon salt 3 eggs 2 pounds 6 ounces (1,077g) flour 1 pound 2 ounces (510g) Ocean Spray® Cherry BerryFusions™ Fruits
Directions:
1. Thoroughly combine all ingredients except flour, flavored fruit pieces and topping in a large mixing bowl. Mix until light and fluffy.
2. Gradually add flour, mixing well on low speed.
3. Add flavored fruit pieces; mix just until combined.
4. Using a #40 scoop, drop cookies onto a sheet pan. Flatten cookies slightly using a glass dipped in sugar. Press almonds firmly into the center of each cookie. Sprinkle with sugar.
5. Bake at 350ºF for 8 to 12 minutes or until firm to the touch. Do not over bake. Immediately remove from pan to wire rack to cool.
