Blueberry Sour Cream Loaf

Ingredients:

TOPPING:
8 ounces (227g) brown sugar
3 ounces chopped walnuts

BATTER:
1 pound 3 ounces (539g) sugar
1 pound 2 ounces (510g) butter, softened
5 eggs
1 pound 8 ounces (680g) flour
1 ounce (28g) baking powder
1/2 ounce (14g) baking soda
1/2 ounce salt
1 pound 4 ounces (63ml) sour cream
1/2 ounce (16ml) vanilla extract
1 pound 4 ounces (567g) Ocean Spray® Blueberry BerryFusions™ Fruits

Directions:

1. Combine topping ingredients in a separate bowl; set aside.

2. Thoroughly combine sugar and butter in a large mixing bowl. Add eggs; mixing well.

3. Combine dry ingredients in a separate bowl.

4. Add dry ingredients, alternately with sour cream to butter mixture, mixing well after each addition.

5. Add vanilla and flavored fruit pieces, mixing just until combined.

6. Spread batter evenly into 4 greased 8 1/2 x 4 1/2 x 2-inch (21.5 x 11.5 x 5cm) loaf pans. Cover each loaf evenly with topping.

7. Bake at 350ºF for 55 minutes or until bread tests done.

8. Cool 5 minutes on wire rack. Remove from pan and cool completely.

YIELDS: 4 loaves
