Blueberry Coffeecake

Ingredients:

TOPPING:
10 ounces (283g) brown sugar
8 ounces (227g) chopped walnuts
2 ounces (57g) butter
1 teaspoon cinnamon

BATTER:
1 pound 8 ounces (680g) sugar
1 pound (454g) butter or margarine, softened
8 eggs
3 pounds (1,361g) flour
1 ounce (28g) baking powder
1 pound 8 ounces (750ml) milk
1 ounce (31ml) vanilla extract
1 teaspoon lemon extract
2 pounds 8 ounces (1,134g) Ocean Spray® Blueberry BerryFusions™ Fruits

Directions:

1. Thoroughly combine topping ingredients; set aside.

2. Mix sugar and butter together until completely blended in a large mixing bowl. Add eggs and mix well.

3. Combine dry ingredients in a separate mixing bowl.

4 Combine milk, vanilla and lemon extract in a separate mixing bowl.

5. Add dry ingredients alternately with the liquid ingredients, to the butter mixture, mixing just until dry ingredients are moist.

6. Add flavored fruit pieces to batter. Mix on low speed until thoroughly combined.

7. Grease 4, 8-inch (21.5cm) round cake pans. Scale 1 pound 4 ounces (567g) batter for each cake. Sprinkle 2 1/2 ounces topping evenly over each cake.

8. Bake at 350ºF for approximately 30 minutes or until cake tests done.
