Blueberry Almond Muffins

Ingredients:

2 cups (230g) flour
1/2 cup (115g) brown sugar
1/4 cup (58g) sugar
2 teaspoons baking powder
1 teaspoon salt
1 1/4 cup (310ml) milk
1/2 cup (125ml) oil
1 egg
2 teaspoons vanilla extract
1 1/4 cups (219g) Ocean Spray® Blueberry BerryFusions™ Fruits
Sugar, for topping
1/3 cup (20g) slivered almonds

Directions:

1. Preheat oven to 350º F.

2. Grease a 12-cup muffin tin. Combine flour, both sugars, baking powder and salt in a medium mixing bowl.

3. Combine milk, oil, egg and vanilla extract in a separate mixing bowl. Add liquid ingredients to dry, stirring just until dry ingredients are moist.

4. Stir in blueberry flavored fruit pieces.

5. Fill muffin cups 3/4 of the way full with batter. Sprinkle tops of muffins with sugar and almonds.

6. Bake for about 25 minutes or until golden brown. Cool 5 minutes in the pan.

YIELDS: 12 muffins.
