Cranberries have a specific distribution of organic acids that includes
quinic, citric and malic acids. It is the acids combined with the astringency
of cranberry that make for a wonderful clean taste that blends nicely
with other fruits and other foods.
- What about the stability of cranberry’s color?
Cranberries get their color from anthocyanins. The specific anthocyanins
of cranberry are most stable at ph <3.0. Cranberry’s color
is stable under normal manufacturing and heat processes.
